Creamy Broccoli Soup.


It would be a lie to say this is the best creamy soup ever, because I love ALL creamy soups so much, but this is the best broccoli soup I've ever tried, creamy but light still, this is a recipe I tried and then I modified it a bit to my taste.

I haven't had the chance to try it chilled (on the recipe they say it tastes just as good) but here at home, at the second it's ready, we eat one plate, and then another (then I realized it's not a good idea for me and my husband to cook the meal for more than 1 day at the same time, cause we will eat it all in 1 day anyways). No matter the weather you should try it, and if you're patient enough, let me know if it's true that cold it's just as good.

Ingredients:


-2 tablespoons olive oil
-1/2 onion (chopped)
-2 cloves of garlic (chopped)
-1 large head of broccoli (separate the florets and chop the stem)
-1 large potato, peeled off and cut into squares.
-4 cups (1 liter) of chicken broth
-1/2 cup of milk
-2 or 3 (or 4 or 5 :P) tablespoons of sour cream.
-Salt and pepper to taste.
-Green onion (Scallion),some Celery or Parsley (to decorate your plate)
-Some extra cream (to decorate too).

Instructions:


1. Preheat the oil in your pot and once it's ready add your chopped onions and fry them until transparent, if your onions end up a bit golden brown don't worry (and if there're a few dark brown pieces just take them off and go on, it won't kill anybody).


2. Put the broccoli stem pieces in the pot with the onions, cover it, and let it cook for 7 to 10 minutes (keep an eye on them, don't let them get burnt).


3. Add the garlic and cook for about 5 more minutes.


4. Add the chicken broth, the potatoes, salt and pepper and when it comes to a boil, add the broccoli florets and cook at a low heat 10 more minutes (with no cover).


5. Turn off the heat and let it cool a bit, once it's not burning hot, process it little by little in a mixer or food procesor until you get a purée-like consistency.

6. Pour your mix back in the pot, add the milk and cream (and even a few chunks of cheese), check if it needs any more salt or pepper, and heat your soup until ready to serve (boiling it, is not necessary).


7. Serve and decorate with some cream in the center and the onion/garlic/parsley as you like, or just eat it like that, you might like to have some croutons, your favorite bread or even a sandwhich.
